It’s custard. No, it’s a macaroon. No, it’s a custaroon! It’s an invention by Gigi Gaerlan of The Custaroonery in the Philippines. Eaten chilled, it’s like biting into bite-sized servings of flan topped with a moist macaroon (not to be confused with the French macaron). I’ve never seen this anywhere else and I’m glad I got this as a pasalubong (or souvenir) from the Philippines. Now I have to visit this place and try their other innovative treats next time I’m in the islands.
