One of my favorite ramen places of all time is Santouka Ramen (山頭火) inside the Mitsuwa Marketplace in Torrance. They make some of the best ramen, and my favorite ramen there is their spicy miso ramen. The broth is very flavorful with a good amount of kick. I like to have it topped off with Santouka’s special pork, which they call “Toroniku Cha-shu”. From their site: Toroniku Cha-shu is simmered pork cheek (jowl) meat. Pork cheek meat is very rare and only 200-300g can be taken from each pig. It has a very rich flavour and it is tender like fatty tuna. Don’t skimp out on the pork. Upgrade because it’s quality and it’s worth it.
